The origin of pineapple
Pineapple is a tropical plant native to South America. Thailand is currently the main producer of pineapples in Asia. The supply of fresh pineapples and juices from the United States accounts for more than 70% of the world market.
Dried pineapple production process
1. Raw material processing
Choose ripe pineapples. Remove rotten fruit, diseased fruit, insect fruit, peeled and hardened. Choose yellowish, pineapple-scented pulp for slices. Each slice is 3-4 mm thick and fan-shaped.
2. Hardening and color protection
Pineapple pulp is a juicy berry. The purpose of adding lime is to combine the pectin material with calcium to form insoluble calcium pectate so that the loose and easy-to-boil pulp becomes slightly thicker and not easy to boil. Rotting also neutralizes the acid content in the pulp. The method of soaking lime is to soak the pineapple slices in the supernatant after stirring with 3% lime water for 8 hours, then rinse with water and drain the water.
3. Treatment of concentrated sugar liquid
Prepare a 60% sucrose solution consisting of 60 kg granulated sugar and 40 kg water in a 100 kg sugar solution. The pineapple slices are immersed in a 60% sugar solution. After the sugar solution soaks the raw materials, the sugar soaking time is 24 hours.
4. Drying
Remove the pineapple slices from the sugar solution, drain the water, and dry at 65°C for 18-20 hours until the water content reaches 16% as the standard.
5. Packaging
The dried pineapple slices or pineapple slices will retain moisture when they are in direct contact with the air, so they need to be sealed and packaged. Vacuum packaging can preserve the color and fragrance of pineapple slices or pineapple slices to the maximum.

Precautions:
1) After pineapple slices absorb the concentrated sugar liquid (60% sugar content), the concentration of the concentrated sugar liquid will decrease. But it still has the aroma of pineapple, it can be used as pineapple juice, or it can be used after adding sugar to increase the concentration.
2) The pre-drying of pineapple slices can control the temperature to be higher, which is beneficial to dehumidification. As the sugar content increases in the later stage, the temperature needs to be lowered for drying.
